Chipolte Chicken Marinade

Inspired by the old song popularized by Simon and Garfunkel, this recipe combines parsley, sage, rosemary, and thyme with the kick of chipolte pepper into the perfect chicken marinade.

  1. Pour the wine and olive oil into a mixing bowl. Add the chipolte pepper, garlic, parsley, sage, rosemary, and thyme; whisk until evenly blended. Marinade chicken for an hour to overnight. BBQ or roast chicken pieces as desired.
  2. For crockpot: cut two chicken breast into several pieces and put into pot. Pour marinade over and mix so all chicken pieces are throughly covered. Then arrange so chicken is as covered by marinade as possible. Cook on low for 6-8 hours. Check to be sure chicken is completely cooked before serving.
