  1. In a large bowl, stir together the lemon gelatin mix, lime gelatin mix, & cold water.
  2. Drain the pineapples completely--save the juice and add it to the hot water until there is exactly 2 cups of hot water/pineapple juice. Do not over add water. Stir until gelatin has completely dissolved.
  3. Stir in the celery, carrots and crushed pineapple so they are evenly dispersed throughout.
  4. Pour into a 2 quart dish and refrigerate until firm, at least 3 hours.
