In a large bowl, stir together the lemon gelatin mix, lime gelatin mix, & cold water.
Drain the pineapples completely--save the juice and add it to the hot water until there is exactly 2 cups of hot water/pineapple juice. Do not over add water. Stir until gelatin has completely dissolved.
Stir in the celery, carrots and crushed pineapple so they are evenly dispersed throughout.
Pour into a 2 quart dish and refrigerate until firm, at least 3 hours.
