Paleo Slow Cooker Pork Loin


Boneless pork loin slowly cooks in a curried fruit sauce until tender and delicious. Changed to reflect more paleo. Careful of the sugar in the orange juice, try for just organic and no added sugars.

  1. Combine orange juice, curry powder, chicken bouillon, ginger, cinnamon, and salt in a slow cooker. Stir in the apple, onion, garlic, raisins, and coconut. Place entire pork loin in slow cooker.
  2. Whisk together the water and sweet potato starch in a small bowl until there are no lumps; stir into slow cooker.
  3. Cover; cook on Low until pork is very tender, 5 to 6 hours.
