"Kitchen Sink" Minestrone Soup


I adjusted this recipe to accommodate some leftover veggies I had in the fridge, beans/pasta I had in the cupboard, etc. (hence the "kitchen sink" name).

  1. Place 3 Tablespoons of oil in a large deep saucepan over medium heat. Add onions, carrots and celery after a minute and cook until onion softens. Add garlic till fragrant.
  2. Add remaining ingredients except pasta and cheese to the pot. Bring to a boil, cover, and reduce heat. Simmer for approximately 1 hour until vegetables are barely tender.
  3. Add pasta, and simmer till pasta is done. Correct seasoning, sprinkle last tablespoon of olive oil and serve hot with grated cheese.
