I was looking for an oil/butter free recipe and came across Roxie's Bran Muffins. Yummy as they are I thought I could modify it to make it oil and butter free.

  1. Preheat an oven to 375 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper cupcake liners.
  2. Cover dates with water in a microwave-safe bowl, and microwave on High for 1 minute to plump. Drain the dates, and set aside.
  3. Beat the egg with milk in a bowl, and mix in the bran. Let the mixture stand until the cereal absorbs the liquid, about 5 minutes. Gently mix in the plumped dates, flour, baking soda, cinnamon butter flavour, shredded apple, mashed banana, sugar, salt and molasses and stir a few times to mix.
  4. Spoon the batter into the prepared muffin cups, and bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
