Chicken seasoned with taco seasoning and topped with salsa, then baked with rice Derived from "Salsa Chicken"

  1. Preheat oven to 375 degrees F (190 degrees C)
  2. Place Rice in bottom of 8x8 baking dish
  3. Bring the broth and butter just to a boil in a kettle or covered saucepan.
  4. Once the water boils, pour it over the rice, stir to combine, and cover the dish tightly with heavy-duty aluminum foil.
  5. Bake on the middle rack of the oven 30 minutes.
  6. Sprinkle taco seasoning on both sides of chicken breasts.
  7. Remove rice from oven and quickly place chicken breasts atop the rice.
  8. pour salsa over all.
  9. Bake at 375 degrees F (190 degrees C) for 35 to 45 minutes, or until chicken is tender and juicy and its juices run clear.
  10. Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.
