Crispy edges, and chewy centers; these cookies are a crowd pleaser for sure! This was the first time I made the recipe and made adjustments. I love cinnamon and sugar so this was a perfect recipe for me!

  1. Preheat oven to 400 degrees F (200 degrees C). (lower temp to 375F if using dark pans).
  2. Cream together butter, shortening, 1 1/2 cups sugar, the eggs and the vanilla. Blend in the flour, baking powder and salt. Shape dough by rounded spoonfuls into balls. No bigger than 1 inch round.
  3. Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets. Use parchment paper.
  4. Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.
  5. At Christmas I used 2 tbsp red sugar with 1 tsp of cinnamon and 2 tbsp green sugar with 1 tsp of cinnamon.
