The Amish have a wicked sweet tooth, and this fact has bled into what they do with home-made sauerkraut which allowed me to learn to love it.

  1. Mix all the above ingredients together, then correct for sweetness (sugar) and acid (reserved sauerkraut juice). Allow to marinage overnight in refrigerator.
  2. Bring to room temperature first before serving.
