Fat and milk free but these muffins are perfection, tender and moist. With or without the add-ins, they are good enough to call desert, but healthy enough for anytime. Works fine as bread too, just cook about 45-50 minutes!
Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line the muffin cups.
In a medium bowl, combine eggs, applesauce, vanilla and bananas. In a separate bowl, mix together flour, salt, sugar and baking soda and dry spices. Stir banana mixture into flour mixture. Fold in raisin and walnuts if desired. Pour batter into prepared muffin cups.
Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.
