Toasted Coconut Ice Cream

Creamy ice cream with a rich coconut flavor. A sweet treat that any coconut lover would enjoy.

  1. Preheat oven to 300 degrees.
  2. Toast coconut in the oven, stirring every 5 minutes until browned. Put some aside for garnish.
  3. Combine the milk, cream of coconut and toasted coconut in the container of a food processor or blender, and mix thoroughly.
  4. Stir in cream. Cover and let steep in fridge for several hours.
  5. Pour into the container of an ice cream maker, and freeze according to the manufacturer's instructions.
  6. Add chocolate chips in the last few minutes of the freezing cycle.
