Chicken With Mushrooms

A bed of tender mushrooms is laden with the winning combination of chicken, mozzarella and more mushrooms, proving you just cannot have too much of a good thing. Serve with rice or noodles.

  1. Preheat oven to 350 degrees F (175 degrees C).Saute mushroom and onion together in olive oil.
  2. Dip chicken into beaten eggs, then roll in bread crumbs, parmesan cheese, salt, and pepper.
  3. In skillet, over medium heat. Brown both sides of chicken in skillet. Place chicken on top of mushrooms, arrange remaining mushrooms on chicken. Add chicken broth and mushroom soup to pan.
  4. Bake in preheated oven for 30 to 35 minutes, or until chicken is no longer pink and juices run clear.
  5. Put cheese on top the last 10 minutes of cooking.
