Beans and greens are a perfect combination; earthy and satisfying. This recipe for Swiss chard with garbanzo beans, onion, and fresh tomato is brightened with lemon juice and makes a perfect vegetarian main dish or a tantalizing side dish for fish or meat.

  1. Heat olive oil and bacon grease in a large skillet. Stir in onion, scape, cook and stir for 3 to 4 minutes, or until soft and fragrant, add garlic, saute for 1 minute. Stir in garbanzo beans, and season with salt and pepper; heat through. Place chard in pan, and cook until wilted. Add tomato, squeeze lemon juice over greens, and heat through. Plate, and season with salt and pepper to taste. Top with goat cheese, optional.

I had to add my own special twists to this recipe. I used 1 T bacon grease and 1 T olive oil. I had no shallots so I used 1/2 C of chopped sweet onion, 2 cloves of garlic, minced and 3" of a gar...
