Poor Man's Caviar

A mix of black beans, black-eyed peas, and garbanzo beans, corn, red onion, garlic, cilantro, and basil tossed with a red wine and olive oil vinaigrette dressing and topped with avocado. Makes a fabulous dip or side dish. Kidney beans and navy beans can also be used.

  1. Stir the black beans, black-eyed peas, garbanzo beans, white corn, onion, garlic, cilantro, and basil together in a bowl.
  2. To make the dressing, mix the olive oil, red wine vinegar, salt, pepper, dry mustard, and hot sauce together in a small bowl until well blended. Pour over the bean mixture and toss to mix evenly. Refrigerate for 24 hours before serving. Top with fresh avocado.
