Balsamic Bruschetta


This is SO GOOD! Very quick and easy. Balsamic brings out the flavor even if you're not using summer-fresh tomatoes. YUM!!!

  1. Add all ingredients (except bread!) into food processor or magic bullet. Whirl intermittently until all is chopped together. Taste and adjust vinegar and salt as needed.
  2. Slice bread, brush with olive oil, and place oil-side down on cookie sheet. Put in 350 degree oven for about 4 minutes. Top with bruschetta.
  3. Optional - add fresh mozzarella on top of bruschetta-topped toast and broil a few minutes longer until melted. YUM!!!
