Sauteed chicken breast and mushrooms simmered in a mandarin orange mixture.

  1. Prepare rice as directed on package.
  2. Heat butter in a large skillet over medium high heat. Saute chicken in butter until browned. Remove from skillet and set aside.
  3. Saute mushrooms in skillet for 1 minute. Stir in flour. Add water, orange juice concentrate and seasoning.
  4. Heat to boiling, stirring. Simmer, stirring, for 4 minutes. Return chicken to skillet; stir in onion and peppers. Heat through, serve over rice and top with mandarin oranges.
