Garlic Ginger Tofu with Veggie Stir Fry over Rice

Tofu simmered in its own juices and seasoned with garlic, fresh ginger, and a little Lemon juice - this pairs well with steamed rice and veggies to make an easy weeknight meal.

  1. Heat oil in a wok over medium-high heat. Stir in garlic and ginger, and cook for 1 minute. Add tofu to the pan with tamari, and stir to coat. Cook on high heat until Tofu has a nice light brown seared color to it.
  2. Sample to test flavors. If desired, add more garlic and/or ginger.
  3. Add Stir Fry veggies. (I used Costco Brand that I defrosted in the microwave first).
  4. Serve over White or Brown Steamed Rice
