Chantal's New York Cheesecake

This low carb version of Chantal's cake tastes just as good as the original. I swear, I cannot taste the difference! Going crustless also makes preparation even easier, although watch out: it may cook a bit faster. I start checking doneness after 45 minutes.

  1. Leave out all of the ingredients at least 1 hour ahead of time, so that they warm to room temperature.
  2. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
  3. With a mechanical mixer, beat cream cheese with sugar until smooth. By hand, blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream and vanilla until smooth. Pour filling into the springform pan.
  4. Bake in preheated oven for 45 minutes to one hour, checking for firmness. When the middle jiggles like gelatin and the outside is just beginning to brown, turn the oven off, and let cake cool in oven with the door closed for 2 hours (it will continue to cook).
  5. Chill in refrigerator for at least 2 hours or overnight.
