Extra-Easy Spinach Lasagna -- Krysie's Version


An easy way to make an extra cheesy spinach lasagna. No or low fat cheeses reduce fat and cholesterol. Use your favorite pasta sauce.

  1. Mix together ricotta cheese, spinach, 1/2 of the mozzarella cheese and eggs.
  2. Spread 1/2 container pasta sauce in 13 X 9 X 2 inch baking dish. Top with 3 lasagna noodles, 1/2 container pasta sauce and half the spinach mixture. Repeat layers. Top with last 3 lasagna noodes and remaining pasta sauce. Slowly pour water around inside edges of baking dish. Cover with foil.
  3. Bake at 400 degrees F for 50 minutes. Uncover. Sprinkle with remaining mozzarella cheese. Bake 10 minutes or until hot and cheese is melted. Let stand 10 minutes.
