  1. Heat the oil in a large skillet. Peel the plantains and cut into 1 inch slices. Place the plantains in the oil and fry on both sides until golden; approximately 3 1/2 minutes per side.
  2. Remove the plantains from the pan and flatten the plantains to about 1/3 inch.
  3. Fry them again until golden yellow on both sides. Salt to taste and serve immediately.
