Chicken a la Calorie King

A nice low cal dinner using leftover chicken and frozen or leftover vegetables and rice. Serve it with baking powder biscuits.

  1. Combine chicken, rice, vegetables and 2 cups broth in a large fry pan over medium low heat. Stir all together and let simmer until liquid reduces to at least half, about ten minutes at simmer.
  2. In a medium sauce pan, melt the butter and add the flour, stirring constantly over low heat until the flour turns a light brown. Over medium heat, whisk in slowly, the 1 & 1/2 remaining cups of broth and the 1/2 cup of cream. Stir that until it thickens, about a minute, then add it to the chicken mixture Season with salt and pepper to taste, unless leftover chicken has enough of its own seasoning already. Serve hot.


I don't eat chicken but this one looks good, and is probably worth a few calories. Cute name.

I gave this a 5 based on it's ease and use of leftovers. I made this with a few changes however. I'm sure as is, it's a tasty as can be but I don't like canned milk or cornstarch. Thusly, I star...
