  1. Mix together: chili powder, salt, cumin, garlic cilantro and pepper. Coat pork cubes with mixture and let sit 45 minutes (longer the better) in refrigerator.
  2. Grease 8" square pan and squeeze pieces together in pan.
  3. Preheat oven to 225 degrees F (107 degrees C).
  4. Bake 1 1/4 hours, or until crispy.


I didn't have chili powder, so I used a thai red chili paste and it turned out excellent. Next time I will marinade it longer. I took the suggestions of other reviewers and snugged the meat tigh...
