Beth's oatmeal cookie recipe was the one I chose, but I always need to adapt, so I made my usuals, and added a new one, as a friend had given me a new 9lb. box of oatmeal from Costco,the quick kind, which I don't usually use, but sure was going to find a way. It came in 2 divided sacks, gave 1 to a young man who does some baking in his family of 6,and I decided to try my hand at Beth's recipe, the rest is taste history.
In a large bowl, cream together the yogurt,apple butter or apple sauce w/ brown sugar, eggs, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely. Store in airtight container. Make sure you get some, because they don't last long!
