This is a low sugar take on Kevin's Bourbon Whiskey BBQ Sauce. I took out the ketchup, added the ingredients equivalent to 2 cups of sugar-free ketchup (extra tomato sauce/paste, vinegar, and Splenda), and replaced the sugar with Splenda. The only sugar in this recipe is from the canned tomato products.
In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, onion powder, garlic powder, tomato paste, tomato sauce, apple cider vinegar, liquid smoke, Worcestershire sauce, Splenda, and hot pepper sauce.
Bring to a boil. Reduce heat to medium-low, and simmer for 30 minutes. Use a slotted spoon to remove the onion pieces, or run sauce through a strainer if you prefer a very smooth sauce.
