Sombrero Chicken Nachos

Seasoned strips of chicken breast are cooked with poblano peppers, onions and cilantro. Baked atop tortilla chips topped with tomatoes, black beans and plenty of Jack cheese.

  1. Sauté pepper, onion, and half the cilantro in olive oil over medium-high heat. Stir and cook to desired doneness. Season the chicken with garlic powder and fajita seasoning and stir into the pan. Cook mixture until chicken is no longer pink in the middle, about 20 minutes. Remove skillet from heat. Fill a large baking sheet with tortilla chips and top with black beans, chicken mixture, tomato, cilantro and shredded cheese. Bake at 350 until cheese is melted and bubbly, about 13 minutes.

I made this recipe based on Sombrero Chicken and I like this version so much more!!! No bacon, not that crazy about it. Also don't like bell pepper, so I substituted poblano. Served the chicken ...
