BLT Salad

Crumbly bacon, fresh tomato, shredded lettuce and a creamy ranch dressing - this chopped salad is a meal in itself. Great if you are watching your carbohydrate intake.

  1. Place bacon in a large, deep skillet. Cook over medium high heat, turning frequently, until evenly browned. Drain, crumble and set aside.
  2. In a bowl, stir the mayonnaise and Ranch Dressing until smooth. Combine lettuce, tomatoes, bacon and croutons in a large salad bowl. Serves with dressing on the side.

This was such a good salad. I used some left over homemade ranch dressing (about 1/2 cup) with the 1 cup of mayo that the recipe called for. What a hit. I will definetly make this one again.
