  1. Cube and peel eggplant and then place on a lightly oiled pan. Bake at 350 for 20 minutes until roasted.Then mash well.
  2. Combine cheese, bread crumbs, eggs, parsley, onion, garlic and salt with the mashed eggplant. Mix well.
  3. Shape the eggplant mixture into patties. 10 minutes on each side, baked at 350 and they are delicious! I also used only one large eggplant and it still came out perfect. Patties can be frozen before frying and cooked later.Serve with marinara for dipping.
