  1. Add broth to stock pot and heat heat on medium high. Add the spinach. In a seperate bowl whip the eggs with fork. Add the parm cheese to eggs and mix. Increase heat to high and bring to a boil. Reduce heat; simmer lowly add egg mixture. When egg has set, remove from heat and serve immediately. Serve with extra parmesian, for sprinkling on top, and crusty breead.
