Make this lasagne variation for a change. It is WONDERFUL! Using Neufchatel, low fat Mozzarella, skim milk and fat free Ricotta makes this an excellent lower in fat dish! Want low carb? Use Dreamfields noodles - they are totally worth the extra $$. You will LOVE THIS recipe - I promise!
In a skillet over medium heat, cook the sausage until evenly brown. Drain and set aside.
In a large saucepan melt butter with garlic. Allow garlic to cook but not brown. Wisk in Cream cheese and milk until smooth. Remove from heat and add cheese. Return to heat if needed to melt cheese and thicken sauce. Add salt, pepper, basil, meat, spinach and sun dried tomatoes to sauce. Cook gently to mix flavors and heat through.
In a bowl, mix 2 cups Mozzarella, ricotta cheese, Parmesan cheese, and egg.
In a 9x13 inch baking dish, layer 1/3 of the sausage mixture, 1/3 of the noodles, and 1/3 of the cheese mixture. Repeat layers twice, and top with mozzarella cheese.
Bake for 45 minutes in the preheated oven. Let stand 15 minutes before serving.
