Fresh herbs brighten this otherwise, ho-hum soup. You can feel good about eating it not having to count fat and calories like in 'normal' cream of broccoli soups.

  1. In a saucepan, combine broccoli and broth; simmer for 10-15 minutes or until vegetables are tender. Add herbs and fresh ground pepper. In a small bowl, whisk cornstarch and milk until smooth. Stir into the broccoli mixture. Bring to a boil stirring constantly until desired consistency is reached.


Excellent base for a 'healthier' cream of broccoli soup. I used 1% milk in place of evaporated and omitted the onion. BUT, I did add a few sprigs of FRESH Thyme, a pinch of dried basil, 1/2 tsp...
