Zucchini Saute

Another pretty dish. Tomatoes, green pepper and zucchini are sauteed until tender and their flavors have mingled. Rice and water are stirred in and everything is cooked until the liquid is absorbed and the rice is fluffy.

  1. Heat oil in a saute pan over medium heat. Add onion, and cook and stir for 3 minutes. Add tomatoes, zucchini, and green pepper. Stir. Season to taste with salt and black pepper. Reduce heat, cover, and simmer for 5 minutes.
  2. Stir in rice and water. Cover, and cook over low heat for 20 minutes.


I LOVE this recipe. The only thing I do use seasonings to make it more falvourful (usually seasoning salt, onion powder, and celery seed) and dress it with just a touch of Parmesan.
