A hearty potato soup without the calories and carbs found in traditional potato soups.

  1. Saute the bacon, potato, leeks, cauliflower, and garlic for about 10 minutes in a large pot.
  2. Stir in the vegetable broth, and bring the mixture to a boil. Reduce heat, cover, and simmer 45 minutes.
  3. Remove the soup from heat. Blend the soup with an immersion blender or hand mixer.
  4. Add in milk and blend until combined.
  5. If needed, Season with salt and pepper.

This was very good. The only change I made was using home made chicken stock because I had some in the freezer. I also didn't think there was a need to add salt (especially not if using canned...
