The Best Vegetable Beef Stew

I'm usually not happy with most recipes and instead consider them a starter base -something to add my own special extras to. After modifying and adding my own tweaks - this was one of the best stews I've ever made.

  1. In soup pot, brown meat over medium heat. Add the next 10 ingredients (through the pepper); bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until meat is tender. Add the vegetables and wine. Cover and simmer for 45 minutes to 1.5 hours or until vegetables are tender. Combine corn starch and water until smooth; stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened. Discard bay leaves before serving.
