Almost Stuffed Peppers


For a quick way to enjoy an old favorite, stir up stuffed green pepper makings in a skillet. I only tweaked the original recipe to our own tastes. As originally listed I gave it a four. It just needed a little something else to push it to a five, namely tomato paste and green chilies. Next time I will add shredded cheese to the finished product.

  1. In a large skillet, brown beef; drain. Set beef aside and keep warm.
  2. In the same skillet, combine tomatoes, green pepper, onion and seasonings; bring to a boil. Reduce heat; simmer, uncovered, until vegetables are tender.
  3. Stir in rice, green chilies and tomato paste. Stir in beef; heat through. Optional: add shredded cheese before serving.
