Hearty Beef Vegetable Soup in Sour Dough Bread Bowls


A hearty Beef Vegetable Soup using ground meat and lots of veggies and San Francisco Sour Dough Bread Bowls. This soup is budget minded because it's made with ground meat and is packed full of delicious veggies and hearty seasonings.

  1. Brown ground meat being careful so the meat is still in small chunks.
  2. When ground meat is almost finished cooking stir in onions and garlic and cook until the onion and garlic is translucent.
  3. Mix in the tomatoes, broth, potatoes, celery, mixed vegetables, carrots, seasonings and stir to thoroughly combine.
  4. Bring the soup to a boil, then reduce heat to a simmer and cook until the vegetables are tender, about 1 hour stirring occasionally.
  5. If your soup need thickening add one or two enveloped of brown gravy mix into 1/2 cup cold water and stir to dissolve mix.
  6. Stir gravy mix into soup and stir to blend and cook for 5 more minutes stirring occasionally.
  7. Serve sprinkled with Parmesan cheese, if desired.
