Vegetarian Okra Gumbo

Used okra, corn and tomato mixture instead of diced tomatoes. Added celery to complete the trinity. Used cornstarch instead of roux to make it gluten free.

  1. Heat oil in a large saucepan over medium heat. Stir in garlic, onion, pepper & celery; saute until tender.
  2. Stir in mushrooms, okra mixture and its liquid, tomato paste, file powder, bay leaf, salt, and pepper. Cook, stirring occasionally, 40 minutes.
  3. Mix cornstarch and liquid together to make a slurry and add to okra mixure and continue to cook, stirring occasionally, 5 to 10 minutes, until thickened.
