Pound the chicken to 1/4 in thickness and cut into 4-6 pieces. In a shallow glass dish, mix together the bread crumbs, cheese, red pepper, salt, pepper and olive oil. Dip chicken pieces into the egg, then into crumb mixture to coat.
Place coated chicken pieces into a cooling rack on top of cookie sheet. Top with remaining crumb mixture and bake uncovered in the preheated oven for 25 min or until chicken is cooked through and crispy. Top with cheese and broil for an add'l 3-5 min. While baking combine the sauce and tomatoes and heat on the stove top on med-low. Serve chicken topped with sauce with a side of pasta - yummy!!
