  1. Trim the roast of any excess fat, and cut meat into 2 inch cubes.
  2. Transfer the meat to a slow cooker.
  3. Blend remaining ingredients and pour over top of meat.
  4. Cover, and cook on High for 6 to 8 hours.
  5. Remove meat to a bowl and shred using two forks.
  6. Reduce heat to Low, and continue cooking for another hour or two.
  7. Serve on whole wheat wraps or corn tortillas.
