Grilled Garlic Parmesan Zucchini

Grilled zucchini slices get a garlic and Parmesan cheese topping for a quick, savory side dish.

  1. Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  2. Cut the zucchini lengthwise into 4 strips.
  3. Mix the butter, oil, garlic, and parsley in a small bowl.
  4. Place strips, curved side up where appropriate on the grill; diagonal to the grate for easier flipping and more attractive grill marks.
  5. Use a basting brush to coat the topside of the zucchini with half of the butter/oil/garlic/parsley marinate.
  6. Grill for 4-5 minutes.
  7. Turn over all of the zucchini strips.
  8. Baste with the remainder of the marinate.
  9. Sprinkle the Parmesan cheese over each strip.
  10. Grill 4-5 minutes longer and then remove from the heat.
  11. Enjoy!
