  1. Bring the rice and water to boil in a pot. Reduce heat to low, cover, and simmer til done.
  2. Mix the chicken broth through ginger in a medium bowl. Add cut up chicken and marinate while preparing vegetables.
  3. Saute vegetables in pan for a few minutes, or until tender but crisp; set aside.
  4. Add chicken and sauce to pan, simmer and stir 5 minutes, until slightly thickened and chicken is cooked through. Mix in the vegetables. Serve over rice. Garnish with green onions and peanuts.
