Pesto, Goat Cheese, Sauteed Sweet Onions & Baby Bella Quiche

Pungent pesto, tangy goat cheese,sautéed sweet onions and earthy baby bellas come all together in this scrumptious quiche. Great combination of flavors and it's fast and easy. Add a green salad with a Balsamic Vinaigrette and you've got a light, breezy meal.

Original recipe yields 8 servings

  1. Preheat the oven to 350 degrees F.
  2. Prepare pie crust according to directions on box.
  3. Spread pesto evenly in the bottom of the pie crust.
  4. Crumble goat cheese evenly over pesto.
  5. Add EVOO to sautee pan over medium-high heat. Add onions, cook for a minute or two until they start to sweat. Add shrooms and continue cooking until they reduce in size by about half.
  6. Remove from the heat, spread over cheese and pesto combo in the pie pan.
  7. In a large bowl, beat together eggs, half-and-half cream, and flour. Season with salt and pepper.
  8. Pour over goat cheese, pest, onion, shroom mixture in pie crust.
  9. Bake in preheated oven for 30 minutes, or until done.
