Rice and Raisin Breakfast Pudding

Who wouldn 't want to eat breakfast with a big bowl of this wonderful hot cereal in front of them. Rice, raisins, soy milk or 2 % milk, maple syrup or honey, almonds, cinnamon and cardamom.

  1. In a medium saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 45 minutes, or until rice is tender.
  2. In a medium saucepan, combine cooked rice, raisins, maple syrup or honey, soy milk or 2 % milk, almonds, cinnamon and cardamom. Bring to a boil over medium-high heat. Immediately reduce heat to low and simmer, stirring frequently, until thickened about 5 to 8 minutes. Spoon into bowls and serve.


This is excellent. I used 2% milk instead of soy and I used honey instead of maple syrup because that is what I had on hand. I just love this recipe.
