Corn and Black Bean Salad

The dressing is zingy - balsamic vinegar, chili powder, oil and cumin do their magic. Tossed with a salad bowl full of kernel corn and black beans, it 's sensational. We think it would be super rolled in a warm tortilla with a dollop of sour cream. It is also an excellent side dish for a ham dinner.

  1. In a small bowl, mix together balsamic vinegar, oil, sugar, black pepper, cumin, and chili powder.
  2. In a medium bowl, stir together black beans, corn, onion and peppers. Toss with vinegar and oil dressing, and garnish with cilantro. Cover, and refrigerate overnight.
