A little spicy, Thai-inspired soba noodle salad.

  1. In a large pot, cook soba noodles according to package directions. Drain, rinse noodles with cold water, and set aside. Remember to remove 1 cooked cup of noodles for later use.
  2. Mix canola oil, sesame oil, rice vinegar, soy sauce, honey and lime juice. Mix in lime zest, garlic, and red pepper flakes. Toss in carrots, peanuts, and cilantro.
  3. Stir noodles into dressing mixture. Cover, and refrigerate at least 1 hour.
