Noreen's Chicken Noodle Soup

This is a recipe that was given to Corwynn Darkholme by her grandmother, and posted on this site. It is a very savory and tasty soup and I believe that all will like it. If you would like to add even more flavor, try using smoked chicken!! I took Corwynn Darkholme's grandmother's recipe and following a few suggestions by others, adjusted it to our family's tastes.

  1. In a large saucepan or Dutch oven, combine rotisserie chicken and chicken broth. Bring to a boil. Stir in celery, carrots and onion. Reduce heat, cover, and simmer about 20 minutes.
  2. Remove chicken from broth and cut meat from bones. While cutting up the chicken, add noodles to the broth and cook 8-10 minutes (until done). Add meat back to pot and add frozen peas.
  3. In a small bowl, mix cornstarch and chicken broth together until cornstarch is completely dissolved. Gradually add to soup, stirring constantly until soup thickens. Heat through and serve.


One of the things that makes this recipe special is thickening the broth. It makes a nice consistency, and the soup is so thick, it's more like a stew than a soup.
