Southwestern Chicken Soup


Shredded rotisserie chicken is cooked with tomatoes and chiles, spiced with cayenne and cumin and finished off with lime juice, fresh avocado and cilantro for a zesty, unusual soup.

  1. In a large pot over medium heat, saute onion in oil until transparent. Add garlic and cook, while stirring, for two more minutes.
  2. Add broth, canned tomatoes, chicken, green chiles, and jalapeƱos. Season with cayenne, cumin, salt, and pepper. Bring to a boil, then reduce heat, and simmer 20 minutes.
  3. Stir in lime juice, avocado and cilantro. Spoon into serving bowls, and top with shredded cheese.
