Lightened Indian Butter Chicken

Lightened and easier to make as it only requires one pot, this has quickly become a staple of my cooking.

  1. Melt 1 Tb butter in a skillet over low heat. Stir in onion and garlic, and cook slowly until the onion carmelizes to a dark brown, about 15 minutes.
  2. Add the rest of the ingredients except for the chicken to the pot and simmer for 10 minutes.
  3. Add the cut chicken, cover and cook on low for 25 minutes, turning heat down if it starts boiling.
  4. Serve with basmati rice and Naan or pita.

We doubled this recipe and it works perfectly. Not too hot, a nice medium spice for a tasty dinner!
