  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine hash browns, melted butter, cream of chicken soup, sour cream, chopped onion, chopped pepper, Cheddar cheese, salt and pepper. Place mixture in a 10 x 10 casserole dish.
  3. Sprinkle crushed croutons over the top of the casserole - use as much or little as you want.
  4. Bake covered in preheated oven for 40 minutes.
