A cubed chicken soup flavored with garlic, oregano, onion, salsa, tomatoes, taco seasoning, corn, potatoes and sour cream. This is a modification of "Catherine's Spicy Chicken Soup"... Thanks Catherine!
In a large pot over medium heat, combine water, chicken, salt, pepper, garlic powder, oregano, onion powder and chicken base. Bring to a boil, then reduce heat, cover and simmer 1 hour, or until chicken juices run clear. Strain chicken, reserve and decant broth.
In a large pot over medium heat, saute onion and garlic in olive oil until they just begin to change color. Stir in salsa, diced tomatoes, taco seasoning, corn, chicken, and 5 cups (or a little more) broth to cover potatoes*. Bring to a low boil; reduce heat, cover and simmer minimum 30 minutes and thence until serving time. Add 1 cup partially cooled broth gradually to sour cream until homogeneous. Fifteen minutes prior to serving, add sour cream/broth mixture to pot and blend. Simmer uncovered on LOW until served.
