Anna's Chicken and Corn Chili

Use a slow cooker to make this chili with chicken, pinto beans, and corn, flavored with green chilis, tomatoes, cumin, and chili powder and whatever else your heart (taste buds) desires.

Original recipe yields 6 servings

  1. Place chicken and tomatoes (and onion if using) in the slow cooker. Season with 1 tsp of garlic, cumin, chili powder, salt, and pepper. Cook 8 hours on Low setting.
  2. Shred the chicken with 2 forks. Return the meat to the pot. Stir in the corn, green chili, the remaining 1 tsp garlic and the pinto beans. Cook another 2 hours or until ready to serve.
  3. If desired, top with cheese, and/or green onions, and sour cream. Maybe chopped tomatoes on top.
