Easy Indian Butter Chicken

This is a light variation on the original butter chicken done in one pan on the stove. Easy prep and a great dinner.

  1. Melt a few tablespoons of butter in a large lidded skillet over medium heat. Stir in onionand cook slowly until the onion caramelizes to a dark brown, about 15 minutes. Add garlic and cook for a minute longer, then remove all to a side dish. Add oil and cubed chicken and cook until lightly browned. Add tandoori spice and cook with chicken for another minute, remove from pan and keep with onion.
  2. In same pan melt the remaining butter in a saucepan over medium-high heat. Stir in garam masala and cook for 1 minute. Add tomato sauce, salt, cayenne pepper, and evaporated milk. Bring to a simmer, then reduce heat to medium-low; stir in caramelized onions and chicken. Cook for 20 - 30 minutes at a low simmer or until chicken is no longer pink in centre. Serve with basmati or jasmine or brown rice.

This is a great recipe. Very easy and hard to mess up. This was a huge hit with the whole family. They agreed that it was just like the Butter Chicken at our favorite restaurant.
